Chicken, Veggie Quinoa Bowl

Ingredients
1 lb chicken breast
2 sweet potatoes, peeled and diced
2 zucchini, chopped
1 bell pepper, diced
1/2 cup quinoa, dry
3 cups chicken stock
salt
pepper
Italian seasoning
lemon pepper
2 tbsp olive oil
Directions
Slice chicken breast in half. Season with all seasonings on both sides
Sear in skillet with 1 tbsp of olive oil. Flip half way. Remove from heat and dice chicken breast.
Add veggies to baking sheet. Add remaining oil and seasonings. Roast in oven at 400F for 20 mins
Add quinoa and chicken stock to a pot, cover. Bring to a boil. Reduce heat and simmer for 15 mins. Remove from heat and fluff with a fork once all liquid is absorbed.
Add all cooked ingredients to a bowl
