Chicken, Veggie Quinoa Bowl

Ingredients

  • 1 lb chicken breast

  • 2 sweet potatoes, peeled and diced

  • 2 zucchini, chopped

  • 1 bell pepper, diced

  • 1/2 cup quinoa, dry

  • 3 cups chicken stock

  • salt

  • pepper

  • Italian seasoning

  • lemon pepper

  • 2 tbsp olive oil


Directions

  • Slice chicken breast in half. Season with all seasonings on both sides

  • Sear in skillet with 1 tbsp of olive oil. Flip half way. Remove from heat and dice chicken breast.

  • Add veggies to baking sheet. Add remaining oil and seasonings. Roast in oven at 400F for 20 mins

  • Add quinoa and chicken stock to a pot, cover. Bring to a boil. Reduce heat and simmer for 15 mins. Remove from heat and fluff with a fork once all liquid is absorbed.

  • Add all cooked ingredients to a bowl
